In a hot pan add olive oil and a knob of butter, sear a fillet of pollack on both sides for about 2 minutes each side. Baste the pollack with the butter and place pan in a hot oven for about 8 minutes (ensure pan can be placed in an oven before doing this).
When its cooked serve on a plate, season with salt and pepper, baste with the butter from the pan and serve with new potatoes, french beans and a dollop of tartar sauce.
