Great as a starter, fish coarse or snack, smoked fish and cheese mmmmm
First thing is to take great care buying your fish, only buy real smoked fish like Arbroath Smokies or other Smoked fish. Nothing "smoked" by chemicals and bright yellow in colour trust me you will not regret it as the taste will be so much better with the real thing.
Pre-heat an oven to 180c / Gas Mark 4. Melt a table spoon of butter and use to coat small bowls, ramekins or souffle dishes. Gently flake the fish and combine with chopped hard boiled eggs, seasoning with a little pepper. Place the mixture into the bowls/dishes you prepared earlier.
Make a basic white sauce, melted butter, flour and gradually add milk until smooth ensuring the flour is cooked out. Add to this a good generous amount of your favourite cheddar cheese or whatever takes your fancy and stir thoroughly until the cheese has melted. Add a generous tea spoon of English mustard, season with salt and pepper to taste and stir in. Pour this over your smoked fish and egg mix.
Generously sprinkle with freshly grated Parmesan cheese over the top, again buy the real thing not the powdery cheap "Parmesan".
Now place on a baking tray and place in the middle of your oven for 10-15 mins or until golden brown and starting to bubble on top. Serve straight away with some crispy style toast.
